Today I am resting. The only chore is cooking. I will try out an interesting recipe from Hidden Veggies for lunch: A strawberry spinach salad. Not quite sure what’s on the menu for dinner.
We used to make a cheese & potatoe pie which was simply mash topped with a layer of cheese. I experimented with vegan cheese for some time but we didn’t like it particularly.
So I adapted the recipe. Now I layer mash with fried onions and/or mushrooms or other veggies and I top it all with with ground nuts. I grind them with some salt, spices and a little oil. Then it goes into the oven for about ten minutes at 200C/392F. You can also just put under the grill with a little less time but about the same temperature if the mash is fresh and still hot.
As I wrote yesterday I did another try with a vegan cheese recipe. I had tried this one from “Loving It Vegan“. They say it’s like “proper” cheese but we feel that is not the case. It’s still very tasty though and works well on sandwiches. So if you like to try out self-made vegan cheese you can happily go for this one.
I also signed up for both of their newsletters and hope to get some good ideas. Another newsletter I signed up with is from “The Minimalist Baker“. It’s not a vegan per se page but it has vegan and veggie recipes and this vegan Mousaka is absolutely delicious.
